Let's see you have \[ C _{12} H _{22} O _{11} + H _{2} SO _{4}(conc)-->11H _{2} O +12C \] you see that the number of moles of Sulfuric acid is the same; I believe that this is acting as a catalyst/agent. I think the sulfuric acid is dehydrating agent. this reaction produces steam so I want to say water, would be gaseous.

Another thing (H2SO4) isn't affected in our reaction, nothing happens to it, why? because you have the same number of moles on both sides of the reaction so it's acting like a catalyst I think.
