Saponification of a triacylglycerol: I need help setting this reaction up. I started to create it, but I don't think i fully understand what the question is asking. @cuanchi @Frostbite

OpenStudy (summersnow8):

The "hint" to the problem says " Saponification reactions involve base-mediated hydrolysis of ester linkages between the three fatty acyl chain and the glycerol backbone. Each hydrolysis reaction will produce one free fatty acid, i.e. -O-CO-R, plus one alcohol group on the glycerol backbone. Complete hydrolysis will result in glycerol plus three fatty acids. The carboxylic acids will be negatively charged at a neutral pH."

OpenStudy (summersnow8):

This is what I came up with, but it was incorrect

OpenStudy (caozeyuan):

the question says do not include Na+

OpenStudy (summersnow8):

@caozeyuan.... so just leave out NaOH and just have OH for a reactant..... and don't have Na+ as a product?

OpenStudy (caozeyuan):

in reactant you have the triglycerol and OH-. in product you have fatty acid (in COO- form) and the glycerol

OpenStudy (summersnow8):

@caozeyuan do I draw the fatty acid in 3 different windows like I originally did?

OpenStudy (caozeyuan):

I think so, if thats not right just try again

OpenStudy (summersnow8):

Thank you!
