baking soda (sodium bicarbonate, NaHCO3) is added to water, it dissociates into its component ions, namely, sodium ions (Na+), bicarbonate ions (HCO3-) and hydrogen ions (H+). This process is known as ionization.

the um hydrogen ions (H+) from the dissociated baking soda can react with other substances in the water, making it more acidic. This can be observed as effervescence or fizzing, as carbon dioxide gas (CO2) is released due to the reaction.

which results in the formation of sodium, bicarbonate and hydrogen ions, along with the production of carbon dioxide gas.
